“Our favorite Dolcettos grow in Dogliani, high in Northwestern Italy's Piedmont, sub-alpine region. We are extremely excited to have found Dolcetto on our little mountain on the edge of the Cascade Range. We feel this varietal is at its best when challenged with our volcanic sandy-ashy-loam soils and windy conditions. It struggles to ripen at 1000 feet in elevation in the Hecate's Gate Vineyard - which gives us beautiful phenolic development that results from the extended time on the vine. Always one of the last varietals we bring in. This wine is bright crimson, youthful and energetic, with intense aromas of black raspberry and iris blossom. It's lively on the palate with ripe lapin cherries and wild strawberry which is balanced out with dusty tannins, mountain herbs and a long chalky finish. Docetto translates to "little sweet one" not to be confused - this wine is not sweet - but completetly dry. Bottled unfined and unfiltered after undergoing partial carbonic fermentation, folllowed by daily to bi-daily pigéage. It was aged in 2 puncheons and one barrique on the lees for 10 months before we bottled it by hand in our winery. “ -Loop de Loop Vinter
